Can anyone please recommend a good resource for interpreting medical terms from english to spanish. Thank you!!!

I think you mean translate, not interpret.

Anyway, the best dictionary I have is Diccionario de dudas inglés-español de medicina, Navarro. It not only has translation, but explanations of almost all the terms, and common mistakes like mistranslations, false cognates, etc.

Diccionario de Ciencias Médicas,Stedman is another good option.
Finally, I have used Diccionario Enciclopédico University de términos médicos, McGraw-Hill. It's has a lot of translations along with the definitions.
