Calidad del oficio
El reconocimiento de estos fondos originales reside en su amplitud e integridad, que muestra la calidad del oficio cartográfico entre los siglos XVI y XVIII de todos los países productores
My attempt:
The real value of these original funds consists in its amplitude and integrity, that shows the quality of the cartographic ability of all the producing countries between XVI and XVIII centuries

Re: Calidad del oficio
The real value of these original collections consists of their size and preservation, and that they show the quality of the cartographic abilities of all the producing countries between the XVI and XVIII centuries. (Typically, we would not use roman numerals, but spell out sixteenth and eighteenth centuries. But it is correct to leave it that way). Funds = money.

Re: Calidad del oficio
I agree with gernt's translation, but instead of "ability" I would use "trade" (oficio)
