Every time I want to say "very" I always think to say "muy", but then half the time I am corrected and told "mucho" - like mucho cansado, or mucho frio.

You say Muy cansado and Mucho frío.
You use MUY
1- before an adjective (except the comparative ones: mejor, peor, mayor y menor):
muy bella
muy contento
muy difícil
2- before a (past) participle
muy escuchado (escuchar)
muy amado (amar)
3- before a noun acting as an adjective
muy hombre (hombre here means valiente)
muy mujer (mujer here means maternal, cariñosa)
4- before an adverb (except for más, menos, antes, después)
muy temprano
muy tarde
muy despacio
muy lejos
You use MUCHO
1- adverbs: más, menos, antes, después
mucho antes
mucho menos
2- comparative adjectives: mejor, peor, mayor y menor
mucho mejor
mucho menor
3- nouns
mucho dinero
muchos libros
mucha agua
muchas mujeres
4- to modify the verb
Tenemos que estudiar mucho para aprobar el examen.
Tenemos mucho que estudiar para aprobar el examen.
