Your translation is excellent ScottJ. You did a wonderful job, specially taking your time to translate this long letter.

I would just make a few changes:
Quote:

Eres una persona especial de verdad, and tengo suerte de conocerte.

"Eres en verdad una persona especial y tuve la suerte de haberte conocido."
In this case it's better to use the past perfect in Spanish.

Quote:
I care for you and for your well being
Tu y tu bienestar me importan.
this translation is ok but I would like to propose some version.

"Me preocupo por ti y por tu bienestar"
